There are places that ask nothing of you except to arrive.

Where mornings begin slowly, the kettle is always warm, meals are shared around a beautiful table and time seems to move just a little differently.

Wild Roots was born from a longing for that feeling.

Not a holiday. Not a retreat. But a way of living.

After navigating our own health challenges, we found ourselves searching for something we couldn't quite find in the modern world. We weren't looking for more productivity or another wellness trend. We were searching for simplicity. Nature. Nourishing food. Meaningful conversation. A slower rhythm that allowed us to feel truly present again.

That search led us here.

Between the historic streets of Zamość, the quiet forests, crystal-clear lakes and the rescued animals that have found sanctuary nearby, we're creating a place where people can reconnect—with nature, with one another and with themselves.

Wild Roots is our home, and now, it's becoming a place we can share.

Whether you join us around The Intentional Table, stay with us in Poland, gather for one of our seasonal events or simply follow along from afar, every experience is created with the same intention:

A New Chapter in Poland

This autumn we're opening the doors to our first Wild Roots Guest Stays in the beautiful UNESCO city of Zamość.

Designed for solo travellers and couples, our home offers a peaceful base from which to explore eastern Poland's hidden treasures.

Wake slowly in your private room, enjoy a nourishing breakfast, wander the cobbled streets of the Old Town, spend the afternoon at the lakes, visit the nearby animal sanctuary or simply curl up with a book in the sunroom as the seasons unfold outside.

We'll happily guide you towards the places we love most—or leave you to discover them at your own pace.

Choose from homemade breakfasts, seasonal picnic lunches and beautiful evening suppers inspired by Wild Roots. Expect colourful plant-forward dishes, functional mushrooms, adaptogens, fresh local ingredients and sustainable organic meat options, all prepared with care.

For those wishing to travel effortlessly, we're also delighted to arrange airport transfers, bespoke day trips and personalised itineraries.

This is Poland as we know and love it.

Creative Director &

Kitchen Witch

Lucille Dee

​Lucille is a multidisciplinary creative who curates and designs experiences through food, atmosphere, movement and meaningful human connection.

Raised between Italy and the UK and now based in Brighton & Hove, she grew up understanding food as memory, medicine, creativity and love. She cooks intuitively and generously, combining bold flavours with seasonal, plant-led ingredients and a considered, low-waste approach.

Her career spans fashion, film, food, festivals and immersive theatre. She has created for Vogue Paris, Pinewood Studios, MasterChef and Glyndebourne Opera, as well as Wilderness and Love Supreme festivals. Her creative work has also contributed to the immersive worlds of Phileas Fogg, Secret Soirée, Monopoly Lifesized and Divine & Wonder.

Lucille brings together creative direction, styling, storytelling and sensory design to shape spaces that are beautiful, emotionally engaging and rooted in intention. Her work is led not only by how an experience looks, but by how it feels.

Through her life and creative partnership with Simon, Lucille developed a deep connection to his Polish heritage and homeland. Inspired by Poland’s woodlands, traditions, hospitality and relationship with the seasons, she recognised it as the natural setting for their shared vision—bringing together her Italian warmth and creative instinct with Simon’s craftsmanship and connection to the land.Her personal healing journey inspired Wild Roots—a collection of botanical banquets, retreats and immersive gatherings designed to encourage nourishment, creativity, connection and a slower way of living.

At the heart of Lucille’s work is a desire to create experiences with soul: thoughtful, generous and remembered long after they end.

Founder &

Wild Roots Visionary

Simon Zin

Simon is a creative entrepreneur and visionary whose work is rooted in building meaningful spaces, experiences and communities.

For many years, he ran the successful Wild Roots Tattoo studio in Kemptown, Brighton, transforming it into far more than a creative business. The studio became a thriving cultural hub where tattooing, art exhibitions and visiting international artists came together in a spirit of collaboration and creative exchange.

Simon’s creativity extends beyond the studio. A skilled and imaginative builder, he specialises in tiny homes, treehouses and outdoor living spaces that feel connected to their natural surroundings. He combines practical craftsmanship with an instinctive understanding of atmosphere, creating places that are functional, characterful and designed to be truly lived in.

His Polish heritage and experience of Italian and Polish cuisine have also shaped his belief in the importance of gathering. He understands the value of food prepared slowly and with care: simple, seasonal ingredients allowed to develop depth and flavour, then shared around a table. For Simon, cooking and building are connected practices—both bring people together and create a sense of home.

Today, he is channelling these skills into a new chapter: developing a wild water retreat in Poland dedicated to nature immersion, restoration and slower living. Guided by his connection to the land, a deep desire for peace and a belief in the restorative power of nature, Simon is creating a place where people can step away from the noise of modern life and reconnect with themselves and one another.

As co-founder of Wild Roots Retreats, Simon brings vision, craftsmanship and an instinctive ability to shape spaces that foster connection, wellbeing and transformation.
